Not only did I get positive feedback on posting a menu planner last week, I also realized I could keep this blog post open in a Safari window on my iPhone and have one click access to every recipe I planned to make last week. Talk about handy!
So this week, I’m back with round two. For the most part, we stayed true to last week’s menu. I shuffled the days around a bit because I forgot to take the chicken thighs out of the freezer one day and I needed a casserole meal on another day to fit our timing…but with the exception of the weekend (When I ended up spending pretty much all of Saturday out and about with friend and thus, didn’t cook), we ate what you saw.
So what’s up this week? Well…lots of activity. All three kids will be with us through the weekend, my parents will be here Thursday to Sunday and a friend on leave from the Army will be in Friday to Monday. Lots of extra mouths to feed!
Also, looking for feedback on organizing the recipes on this site. Getting to be too many to just scroll through. Any suggestions? Noticed this Tweet earlier today and am also wondering about other options…
Food bloggers, what type of plugin do you use to create recipe organization for your readers? Not sure I like recipage, are there others?

Monday (Pantry and Freezer Meal)
I never feel like cooking on Monday. It’s the first day back to work, I’m generally still worn out from the weekend and there’s only four of us on Mondays…so it’s a great day to go with something easy that has minimal prep time. I’ve got some Jalepeno and Cheddar chicken sausages in the freezer that I picked up at Aldi a few weeks back…but I hadn’t made them yet because I couldn’t decide what to pair them with. Then I remembered pinning a copy cat recipe for Chipotle’s Cilantro-Lime rice. Bingo!
Tuesday (Grocery Supplies)
On most Tuesdays, I actually don’t need to cook. Our Life Group from church has dinner together and we rotate who hosts and who provides the food. Another couple is hosting on Tuesday, so I’m off the hook for dinner. Timing works out well for this as another couple from our church just had a baby and Tuesday is my night to deliver dinner. They are sounding pasta’d out…so I’m going to make beef stroganoff with egg noodles instead. (I generally make this in the oven instead of the slow cooker…but either way, you literally just dump meat and several cans of soup into the container and let it cook for several hours. Easiest recipe EVER and super tasty!)
Wednesday (Fridge and Pantry Staples)
The one meal I was MOST looking forward to making last week was one I never got to try! I’m bringing it back for round two and trying it on a night when I have all the kids here because I think they’ll be intrigued by the idea of “dinner pancakes” that aren’t just breakfast for dinner. I also figure I can make a double batch and have some leftovers to put in the fridge for the lunches and extra snacks when the masses descend the next couple days. (If any of you DID try them last week, let me know how they were!

Thursday (Freezer, Pantry & Grocery)
This is my one monster meal for the week. It SHOULD provide some leftovers and it will also be a bit of a fun celebration meal since grandma and grandpa will be in the house. Our kids LOVE Asian nights in our house, so I’ll do it up right. That means Mr W’s favorite shrimp. It also means the chance to use up some absolutely fantastic filet that Mr W’s parents brought on his birthday. They buy the entire loin and cut it into steaks, but the tail end isn’t really “steakable” so I cut it into stir fry pieces and froze it. That will get thawed out so I can try the beef version of my Mongolian Shrimp recipe.
Friday (Freezer, Pantry & Grocery)
Now Friday is my birthday…so I’ve given everyone fair warning that I may or may not feel like cooking that day. We should have plenty of leftovers by this point, so I’m taking either Friday or Saturday off. My plan is actually to take Saturday evening off though, so I’ll make another leftover friendly recipe that we all love to help carry us through all those guests in the house.
Saturday (Pantry Items)
Since I’ll take Saturday off (or I’ll take Friday night off and make the manicotti on Saturday)…and since we’ll have a bunch of guests here on Saturday, I’ll likely do a big breakfast. I’d prefer to whip out the Belgian Waffles, but since I can only make one at a time, it will have to be French Toast. Mr W bought me this MASSIVE griddle last year and I can do a dozen slices of french toast at a time, so it doesn’t take long to crank out enough to feed a crowd.

Sunday (Pantry and Grocery Items)
Sunday lunches around here and almost always leftovers. Since I cook 5-6 nights a week, we always have plenty of food sitting around and Mr W tends to make himself a massive plate of whatever needs cleaned out of the fridge. (Have I mentioned how awesome it is to have a husband who likes leftovers? We barely throw away any uneaten food around here…unless it’s literal scraps…it gets eaten!) Since Sundays are easy going, it’s a great day for homemade pizza. I can make up the dough in the early afternoon an it’s ready to go by dinner time. I’ve found a wonderful recipe for a honey crust that we all adore and we have fun playing with toppings based on what we can find in the house. For this weekend, knowing what I’ll have on hand…we’ll probably have the following:
Fail-Proof Pizza Dough
BBQ Chicken Pizza
Bacon, Asparagus and Brussel Sprouts Pizza with Red Onions and Goat Cheese
Pepperoni and Mushroom Pizza
Salad & Fresh Fruit
And of course we need some extras… I’ll make the peanut butter pie (or something similarly quick) to take on Tuesday night when we do meal drop off…but there always has to be SOMETHING else I try. Chances are high I’ll knock out a batch of my chocolate chip cookies to send back to base with my friend from the army.
I think the other winner might be Apple Nachos! I keep wanting to try these and they’d be a great dessert to go with the pizza, or while we chill out on Friday or Saturday night.
Lots of new recipes on the list this week. Keep an eye out..I’ll let you know how they go and I’ll post my version of our favorites to the blog in the next week or so.
