There’s something about spring that makes me want to absolutely feast on fresh fruits and veggies and produce. In fact, last week as I was unloading groceries, I noticed just how many of each I’d actually purchased. I tallied them up and realized I had ten types of fresh vegetable and seven type of fresh fruit in the house. (and I RARELY throw produce away…we just devour it.)
Of course one of my favorite things to do with all those fresh fruit and veggies is to make up a salad. Mr W and I both love a good salad. Of course I only get to eat my favorite one once spring rolls around again because one of the key ingredients is simply too expensive off season.

My Absolute Favorite Spring Salad Recipe
- Baby Spinach
- Spring Mix
- Romaine Lettuce
- Grannysmith Apple
- Dried Cranberries
- Goat Cheese
- Marzetti Light Raspberry Cabernet Vinaigrette Dressing
The amounts are up to you. I like equal parts of all three lettuces, but you could leave out either the romaine or the spring mix if you’d like. Then slice up some strawberries, part of a granny smith and toss some cranberries, pecans and crumbled goat cheese on top. Top it all with some of the best raspberry vinaigrette I’ve ever had and you’ve got one amazing salad. Make this with some diced up chicken breast and it’s even better!
