Parmesean Roasted Asparagus
I love vegetables. And for the most part, I love the veggies every one else hates. Asparagus, brussels sprouts, artichokes…mmmm! Can’t get enough. So when I heard about the idea of coating asparagus in cheese and baking it, I was totally on board.
This is a super simple recipe. Quick, easy, and perfect to go with pasta or grilled meats.
Parmesan Roasted Asparagus
- 1 bunch of asparagus with the ends broken off
- panko bread crumbs
- grated Parmesan cheese
- flour
- eggs
Yep, that’s it. Just mix up the panko and Parmesan cheese in 50/50 rations. I used about half a cup of each. Then I tossed 2 Tablespoons of flour in with it and added a little salt. Separate your eggs and roll your asparagus in the whites until well coated. Then roll in the panko mixture. Lay on a cooling rack placed on a cookie sheet and roast in the oven at 400 degrees for 15-20 minutes.
[Note: I find it amusing that my spell checker kept trying to change “panko” to either “pinko” or “spanko.” But since I don’t like my asparagus to be either Communist or Naughty…so we’ll stick with the Japanese bread crumbs.]
